We kind of made these by mistake.  They tasted great and looked amazing and were very popular at the Christmas get togethers.  You can also put actual slices of fruit in between the layers for something a bit different.

It’s easier to handle the jellies if you put them in individual serves but that takes bit more time.  This is one of those things that’s a bit finicky but worth it for fun it brings to the table at Christmas and you can be happy to know there are no artificial ingredients.

There may very well be an easier way to achieve the same effect.  Let us know if you know it or if you’ve tried anything similar and how you went.

Christmas Jellies (All Natural Flavourings)

What you need:
  • ¾ cup of fresh strawberries, blended to puree
  • ¾ cup of fresh kiwifruit, blended to puree
  • ¾ cup coconut cream
  • ¾ just boiled water
  • 6 teaspoons of gelatine
What to do...
  1. You need to do the layers one by one. First get a medium size dish with high sides (or use individual ramekins or shot glasses) and another heat proof bowl.
  2. Red Layer
  3. Blend ¾ cup of fresh strawberries into a puree.
  4. Pour ¼ cup just boiled water into medium size bowl and add 2 teaspoons of gelatine (we use Great Lakes Gelatine)
  5. Add the puree to the water and stir briskly.
  6. Pour the mixture into a your dish or ramekins/shot glasses and then transfer to the fridge to set for at least 20 minutes.
  7. White Layer
  8. Pour ¼ cup just boiled water into medium size bowl and add 2 teaspoons of gelatine
  9. Add the coconut cream to the water and stir briskly.
  10. Pour the mixture onto the top of the strawberry mixture and then transfer to fridge for at least 20 minutes (better to be at least 30).
  11. Green Layer
  12. Blend ¾ cup of fresh kiwifruit to a puree.
  13. Pour ¼ cup just boiled water into medium size bowl and add 2 teaspoons of gelatine (we use Great Lakes Gelatine)
  14. Add the puree to the water and stir briskly.
  15. Pour the mixture onto the top of the coconut milk mixture and then transfer dish to fridge.
  16. Leave to set in fridge for at least an hour before cutting into squares to serve.
